Nuanced ...

It is that time of the year again , the trees are sparkling .. and all the lights are lit .. a stretch of white snow ..and though the day itself is weeks away .. you get the pic .. Christmas are on the way ... even if I am not on the working scene so much now in this stage of my life ... there is still all this ideas in my head , how to make time savings in our daily life .. on the grounds that the month of December always have been so god damn busy all my life , like all day every day !!

So concerning food I am thinking in the line of " One Pot " recipes , time and sink saving .. not so many pots and pans .. less time cleaning , more time eating !




One Pot Thai Curry Noodles This is a quick , tasty dish and the best way is to make the sauce first :

Mix together 2 tbsp Peanut butter , 1 tsp soy sauce , 1/2 tsp chrushed garlic & S&P add water so the end result is thin , set aside.

Saute a few seconds 2-3 thin sliced garlic cloves and 1 tsp shredded ginger in 1 tsp coconut oil & 1 tsp chilioil , add 1 medium sized chopped carrot , 1 green and 1 red sliced peppers and 8-10 broccoli florets , let cook and stir for some minutes , now add 1 tsp lemongrass , 1 cup vegetable stock and the prepared peanut sauce , 2 tsp red curry paste and stir in 1/2 cup coconut milk and some salt , break 1 portion of spaghetti ( 30g ) in half and add water/stock if required till the spaghetti is submerged and cook maybe 5 minutes add 1 cup shredded red cabbage , let it stand for a couple of minutes , stir well and serve immediatly decorate with spring onions & toasted sesame seeds if you like .... enjoy !

This is an easy enough quick fix where you of course can use all kinds of veggies and even chicken or shrimps .. let the fantasy loose ...

This kind of food goes so well with my lifestyle now ... after a life in all kinds of kitchens .. I am more impressed by a stint in fast food than luxury schemes , I adore new innovations & ideas sprung from ewerywhere , new looks , new twists on old taste , combined with zero waste , green energy and maximum recycling !



What do we think about the F.....word .. so scary , especially this time of the year it creeps up on you .. it is the word we spend our lives trying to run away from , we drink , smoke , scroll endlessly on social media or overthink ... FEELINGS ...

Feelings that might be Broken-Lost-Vulnerable-Numb-Fantastic-Hilarious-Lovely-Sun on our faces-Happy ...






I was in Stockholm the other day to spend some time with a cousin who has not been on the family scene as much as the others ... it was like a fairytale to get to know her .. so much to talk about , and what a situation for her to be part of a family from birth but not part of it at all so many years ... there will be many coffes for us to share ... toxic family members who are ruining our lives .. how do we deal with the confusion and heartache ...?

But I am so glad that I got connected with her and her four dogs ..!!




I like when things make sense , I like my life and the people to be neat and reliable ... but to be listening to my cousin was like to dive into worst case scenarios ... catastrophizing ...


So lets shift our focus to joy , try to trace the sounds of untroubled & merry times that soon will be upon us " tis the time "
