A lot of my friends and other people around me , might think I’m crazy … owing to the fact that while eating a meal I can start to think or talk about what we will cook tomorrow … totally in love with different ways to cook and new recipes …
Eat like a Greek , my old motto , will here be presented like Greek food with a twist !
DELICIOUS BAKED EGGPLANT PARMESAN
Slice 3 eggplants finger thick place on paper towel and sprinkle with salt , let sit for 1 hour, to release moisture. Working one at a time , turn over the slice in a mixture of flour , salt & pepper , dip in a bowl with 2 whisked eggs , coat in bread crumbs or panko.
Place on a greased baking sheet and sprinkle on parmesan cheese.
Roast in the oven for 20 minutes 220c , flipping the eggplants halfway through.
In a new greased oven proof dish , spread some tomato sauce and place the baked eggplants onto the bottom , put layers of eggplants and sauce , top with the sauce and slices of mozzarella
, sprinkle on basil & Parmesan cheese.
Bake for another 20-25 minutes uncovered until cheese is melted and the top is golden brown.
When we had our Μεζεδοπωλειο/Mezedopoleio on Aegina , whenever we had Μελιτζάνα φούρνο / Parmesan gratinated Aubergine on the menu it was a bestseller … this is a tempting twist on the Greek original dish .

So get yourself together and and put the right things on the plate … it’s a little bit like in a relationship where you can feel incredibly lonely .. or you can feel incredibly connected unpartnered , it’s all about finding the right things that fill you up …
