Time to do what you love ... we are bizarre snappy approaching the festive season and people are getting into the " We Have to Do " mood !!
Instead of doing well & doing good.. mood ... be of benefit and simply do what you love , luckily I am since some years back in the heavenly situation to choose all by myself what Christmas decorations ( if any ) to put up , aswell as what yule food to fix , for this old hippie it is enough to live with a sense of celebration , feeling everything - blocking nothing ... genuine joy , life is simple ..
I really am a big fan of Ragu , and that kind of dishes where the meat falls in pieces ...
Here comes my best version of RAGU
1 kg of chuck cut in pieces
200 g chopped celery root
2 big chopped onions
4 chopped garlic cloves
4 carotts in pieces
half a cup tomatoe paste
half a litre redwine
1 cup crushed tomatoes
stock
1 l water
bayleaves and oregano
Heat up some oil in a big cast iron pot , and fry the veggies and tomatoe paste on medium heat until soft and nice .. meanwhile fry up the meat in another pan in batches , when they have browned you transfer them into the big pot , when all meat pieces are done you whisk out the pan with the wine and pour it into the big pot , and add all the rest of the ingredients , stir and let it cook slowly for at least 4 hours , add water if it looks dry ... when ready the meat chunks should fall apart when you stir the pot ...lovely , add salt and blackpepper to your liking ... serve with pasta pappardelle & fresh grated parmesana cheese ... enjoy !
Yesterday evening me and some girl friends did have a Glögg as in Mulled Wine turnout , some days before the 1st of Advent , there where also ginger bread & delicious chocolate pieces to taste as well as intense talks … yes we are approaching the Holidays quickly… time to embrace peace & love !
