There’s been minimal recipes here for a long time … I lost interest in everything connected to cooking after the entry of the pandemic … now it seems like I got new ideas swirling around in my head …am also strolling around lighter after my last , long visit to Greece , yep it’s all in my mind but honestly who cares …
So here we go back into the kitchen again …
I will keep my mind on “ Brain Foods “ because they tend to go well with all the other healthy stuff our bodies need … and my body have been indulging in all the good and tasty things during my visit to Greece and Norway , so some action is needed , since it’s not so many weeks to Xmas with all the temptations …
GARLIC and PARMESAN braised GREENS
1/3 cup olive oil
1 head of garlic ,halved crosswise
1 large onion thinly sliced
sea salt & freshly ground pepper 2 bunches kale or collard greens, only the teared leaves
2 oz Parmesan finely grated
Cook the garlics cut side down and the oil in a medium Dutch oven on medium heat , until golden, add the greens, stir and add salt cook until deep green ca. 3 minutes add 1 1/2 cups water cover pot partially, cook until tender 12-15 minutes.
Now add the Parmesan and cook stirring until cheese is melted, the sauce will thicken , taste and season with salt and pepper …

Grilled red peppers are always good to have around .. for instance you can quickly make a tasty dip …
Mix together 4 grilled peppers , 1 cup of toasted walnuts some oil and salt/pepper
and you have a lovely side or a spread for your bread !
When it comes to brain power, greens should be on your plate every meal … they are loaded with vitamins A and K it keeps your bones strong and fight inflammation …
