Pie in the sky .. a dream that might never ever come true , so many things can be put together under that umbrella .. here in Sweden at the moment we should not undergo travels more than 2 hours by car from our homes and not travel abroad before 15th of July .. well then I can´t reach Gotland or my friends in Skåne .. and totally forget about visits to Denmark and Norway .. ok get a grip , I should not place myself in the " complaining category " that´s so boring and I even said to my daughter the other day , one sure thing is we have a lot of unvisited small interesting restaurants out in the country side just waiting to be checked out with a 2 meter distance between the tables of course .. plus a lot of seaside places , it will be fun ... my newly shopped Myconos dresses have to wait until ...

So I can gladly say that I am in a happy mood just by looking at my new basil plant in my kitchen and by the view of the blooming lilac three outside my kitchen window .. so stay joyous by the small things close to you .. pleased that one can take walks , meditate close to the sea , read I have ordered a new book from England .. and to try out new recipes or old favourites ...
Quicker than Quick Baked Feta
Place a block of goat milk feta in a baking dish , top it with roasted cherry tomatoes , pitted kalamata olives , thinly sliced garlic , a good drizzle of olive oil , a couple of pinches dried oregano , some lemon peel and juice of half a lemon , red pepper flakes & black pepper to taste , bake 15 to 20 min. 225c until soft and creamy .. serve directly with bread or potato slices .. it might be the best thing you ever eat ..
Thyme Roasted Red Grapes on Goats Cheese and Grilled Bread , I am unsure if I have posted this yummie before , but as my mother said when she did remarry " It´s better the second time "
Roast the grapes 200c 8 min. after combining them with a little oliveoil , seasalt and thyme , meanwhile brush the thick sourdough slices with oliveoil & grill them until lines appear , now spread your toast thick with goats cheese , top with roasted grapes and some pepper .. delicious try it out !
Chévre Chaud with baked Beats
Put ovenbaked sliced red beats on a piece of bread and place a thick piece of ch´evre on the top .. let it melt in the oven and drizzle honey and pistachios over it .. perfect as a snack or served with a salad an easy evening meal .. love it !
You might be tired of my ranting that I can not go to Greece whenever I like ... yeah , but one of the down things according to that is that I can´t get my hands on good olive oil ... here in Sweden we have a lot of olive oil in the grocery shops , but maybe not all of you know how to get the good one ... first look for a harvest date , the name of the producer if the bottle has it it´s very likely genuine and if you see the free fatty acidity level or FFA listed that´s a great sign ... and last do not fall for fancy packaging and a high price tag ... I normally return to Sweden with my oil in plastic bottles directly from the farm ...
Eating out may be a totally different experience .. when things are opening up again in Europe and in the States ..
