Apron Life
Or maybe apron dancing .... call it whatever you like , a new " apron - season " has started for me , again .. well what can I say , it seems like nothing is stopping me from my cooking adventures , and especially new aprons , new kitchens , new menues & new guests ... all this helds a devilish excitement and joy , just love to start off this summer cooking , at a lovely place a short way out of town in a green lush environment , lucky me it will be like .... " meditation-cooking " breath - peel - breath - smile ......

So what to cook at home then ..
Well the other day I made Broccoli & Cauliflower cut in big thick slices and did bake them in the oven , just brushed the slices with some garlic - chili olive oil before and served with coconut yoghurt mixed with some red curry paste drizzled on top ..
Crispy sushi rice cakes with avocado & smoked salmon , one click of Philadelphia cheese with dill on top , hell yea !
Noodles with mushrooms , leek and Korean red chili paste .. quick and easy !
Toast on dark bread , ricotta with slices of grilled peaches to finish it all off !
Papardelle Pasta with Kale , Fetacheese & Chili , fry the kale a little bit first and then blend it all together slowly ... wonderful !!
Or maybe a more exclusive toast with Truffled Avocado & Pesto Scramble ..
A tasty twist on salad Nicoise .. some roasted veggies , jammy eggs and mustard glazed oven baked salmon , some caper vinaigrette slowly drizzled over this lovely combination .. yes please !
Vegetarian choice , make a mince from ground , cooked mushroom , beetroot and potato to bind it together , served with noodles , sesame paste and black vinegar one or two greens on the side !
Otherwise me and myself is in the middle of grilling asparagus season and it goes with almost everything !!!
Summer feelings .. make it easy for yourself , my best bet when it comes to plan a table is plates and bowls with things that goes well together both in taste and colour .. let people choose what they want to eat ... and drink of course !
Self love is so important , nothing works if you dont start with loving yourself , you cant love anything or someone if you dont like and love yourself .. so take care of yourself from scratch with everything from what you eat , what you think , how you treat others .. make time every day to sit down and breath , give yourself the best thoughts , the human brain registers a broken heart or emotional wounding the very same way it does a broken bone ...so it needs to be nursed with kindness and rest , respect your bodies & try to do the best of your life , do what your soul and heart wants .. life is short .. live it !!

Meanwhile ... between Swedish summer and new cooking experiences ... I have a lot of travelling on my mind , it is like I am already on my way right after the summer ... well Greece is always kind of on my mind .. I sometimes dream in greek ... it might also be because I am preparing for my " Green Greek Island Cooking " on Tinos in September & October .. cant think of a better way to end the Swedish summer than to go down to Greece for the autumn .....and with a faboulous stop some days in London on my way back home ... Great expectations and new things to explore .. for my mind .. thats exactly what I need to soothe myself with ... and my nerves !
Difficult and Easy complement each other.
Being and non-being produce each other.
Long and Short define each other.
High and Low oppose each other.
Fore and Aft follow each other.
Love the summer - sunlight - poolside reading - getaways - fresh veggies - the ocean ... find something that makes you happy and think about it a lot !
If you are thinking about your beach body .. well its the season for thoughts like that ... make it simple - eat the right things and move more .. do not believe all the misguided , outdated and scientifically disproven myths .. aka : all the quick diets on how to lose weight , since all calories are not created equal ... yes you heard me right, its the quality and not the quantity that counts , the exclusive calories come from whole foods like those fresh foods our grandma cooked .. grass - fed beef , wild caught fish , healthy fats , good carbs like veggies , fruits and berries .
Another thing a lot of people believe is right , is if your family and relatives are on the big side it is normal for you to get big or bigger .... our genetics do not make us fat .. what we eat makes us sick and fat ..
And fat does not make us fat if it is the right fat - good fats like extra virgin olive oil , coconut butter , avocado , nuts , seeds , and nut butters keep us full and lean
and finally ready to run down to the beach !!
I have a new obsession ...the worlds most rare chocolate " Pure Ruby "
look it up .. and yes I am trying to train myself to only one piece a day ...not an easy task for a chocolic Xxxx
