Meraki


The Greek word Meraki means " the soul , creativity or love put into something : the essence of yourself that is put into your work "

I hope from my heart that it is the word for me , when I am test cooking , trying out new ways to put green beautiful things together with a new twist for friends or guests , and honestly in everything I do ......

At the moment I am in the middle of a " Marie Kondo " in my basement , to many things to small space .. love my life ... it has been a constant life with boxes to pack or unpack since my father died ... he was a collector , and there was a lot of pieces to sell and leave at an auctionhouse , when I decided to sell the summerhouse ... but there are still some small objects around ... and then a little more than a year ago my mothers husband died ...more pretty things to take care of ...as I said ...love my life ...

So in July me and bff Gittan will have a Vintage - Yard sale at her and Davides beautiful house in Skåne and I will drive my fullypacked car all the way down to the most south of Sweden a fantastic 6 h drive ... so am now in the middle of organising what bits & pieces to bring it has to be done mostly .. now .. because in a while .. quite soon ... I will be cooking at Tuna Orangeri .... by the way I also want to find my chef shoes which I put down there after my Christmas cooking Xxx

Fullmoon coming up , yes and it will be an " Emotions versus Logic " kind of moon ... the fullmoon in mysterious Scorpio gives us a sense of completion , and our goals may become achievements .... it will also be all about love , for lovers & soulmate connections ... Scorpio is all about the secrets .. happening Saturday 18/5 !

Do not push away all that is uncomfortable , and cling to all that is pleasurable. That is Ego.

Looking for some Collagen ... which has the nick-name as the ultimate " inside-out " beauty product because it is said to reduce wrinkles ... you might get it from food instead of buying expensive jars of anti-aging cream ,

well there is :

Bone broth

Spirulina

Egg whites

Gelatin

We are between hedge and lilac , slowly easing into lovely summer days and evenings .. time for lazy cooking , quick meals .. just throw some greens and grains together with tasty cold sauces ..

I did blend together a slaw sauce , with what I had in my house at the moment ..

mayo , roquefort cheese , seasalt , apple cider vinegar and a dollop of greek yoghurt , it doesnt have to more complicated than that ... I will make a plate with the slaw , an avocado and some slices of smoked salmon ..absolutely perfect after my bicykle-tour Xxx

There is also a new kid in town ....to mingle with .. meet my new friend

Cava Brut Organic

it is dry and has an elegant fragrance of green apples and lemon , perfect for the summers all gatherings !

Mint Pesto

1 tbsp toasted pine nuts

150 g fresh mint - mix those 2

add 1/2 a cup of creme fraiche

salt & pepper after taste

add some drops of olive oil

Almond & Tomatoe Pesto

3/4 blanched , and toasted almonds

6-8 ripe tomatoes cut in squares without seeds

4 garlic cloves

basil leaves and parmesana cheese to your taste

1/2 cup of olive oil mix all this leave it a bit chunky and add sea salt & black pepper

Harissa - Roasted Broccoli & Quinoa Bowl

Whisk away : 2 tbsp harissa , 3 grated garlic cloves , 6 tbsp olive oil , 3 tbsp apple cider vinegar , salt and pepper add to this blend , 1 large head of broccoli cut into florets with some stalk attached , now toss it around until it is all coated , spread it on a baking sheet add more S & P and roast 220c 35-40 min. or until lightly browned , for the last 15 min. add some almonds or pistachios for crunch , now add cooked quinoa into the serving bowls ... mix in some chili - garlic olive oil for taste , the broccoli , and garnish with some sliced avocado & sliced red onion , make a side of cucumber yoghurt sauce to offset the heat of the harissa ... call some friends and enjoy !!
