Mermaid Stories ..

To Love a Mermaid .. is to dance with your shadows ...

And face the cold - hard - beautiful truth ... a mermaid takes responsibility for herself ... and her secret powers ...

I have felt like a mermaid many times ... exessively joyful , while the spirit scatters .. I see it - I like it - I want it ....

See magic every day .. be the joy , the laugh , the fantasy - seek the adventure !

Follow your intuition is one of my mantras ... and look where that got me ..

I am using my movements as a medicine .. did learn that years back , from some amazing people in Greece .. am also a big fan of " back - to - nature - femininity " be yourself , you are enough !

In order to be a fully , live and kicking mermaid ..... stock up on these tips .. Eat mindfully - Spice up - Add veggies to .. everything - Move & release your endorphines - Stay hydrated - Travel - Express gratefullness - Listen to music - Breath slow - Get some good sleep - Make plans ... Laugh , Dance & Love !

" Life is a journey not a destination "

" Me - time " with regular small pleasures , is also super important for mermaids ..

Slow down into the present moment , live in the moment ..... and open up your heart ....

Deep conversations and to be socially engaged with other people ...... is happiness for mermaids ..

Let people know that they matter to you .....

I love mermaids .. and their vivid surroundings ....

I also love to gather some friends , for a week night dinner party or a spontaneous lunch did that a lot on Aigina , during low season and we were open only weekends... it really doesnt have to be so complicated ..

As a Starter , make an easy snack board : sliced red peppers , celery , carrots , olives cauliflower nuts , cheeses , crackers , charkuterie and some spreads .... and a convinient Main like a One Pot Pasta or maybe a Boeuf Bourguignon ...... both very easy to handle , plus the best .. Dessert , my favourite homemade chocolate cake , served with vanilla ice cream ...

Lots of wine and everyone is happily chatting away .... in good company , always nice moments to remember !

While leafing through some magazines , I saw and did read this article , about women and belly fat .... it says that a little tummy is nothing else but healthy ( love that ) ... if your waist circumference is within or smaller than that of your hips , with a little bit of fat on top of the muscle - and as a woman - thats something we need , in order to keep the hormones in balance ... am also So Happy to read , that women who have very visible 6-packs .. have taken their fat loss too far ... for once in my life I am super happy about my " yoga stomach " Xxx

The days are longer , lighter and brighter & this coming week it is Easter in Sweden ...

I will not be doing any Easter cooking this year or going to any Easter parties in Sweden because I will be in Greece ... have not been there for Easter since I moved back up here some years ago , and am really looking forward to it .... soon , soon !!

But for you who will , do an Easter table , I have some ideas ..

Because , Eggs are Easter in a shell ..

Avocado Gratin with Egg

Split an avocado and make place for an egg in the halfes , spice it up with S & P , chili and top with some grated parmesana cheese 200c 10 min. completely delicious !

Italian Breakfast Omelette

4 eggs , white and yolk separated

heat up a skillet with some olive oil , add salt and pepper in the egg whites , fry on low heat until it has set , apply the yolks evenly on top and grate parmesana cheese all over , fry 1 - 2 min. on low heat garnish with some greens , maybe rucola

serve with chunks of levain bread ... what a wonderful morning !

The best , best Avocado Sandwich

oven on 150c

toast 3 tbsp sunflower seeds together with some oil & seasalt 20-30 min.

fry 1 slice of sourdough bread in butter until crispy

spread a thick layer of Philadelphia cream cheese on the bread slice , sliced avocado , chopped

parsley & basil

Poached Egg

boil up enough water in a medium size pot mix 1tbsp white wine vinegar with a little water in a small bowl , crack 1 egg in the mix and when the water is boiling , turn off the heat and put the egg and mix in the pot , leave for 2 - 3 min. pick up with a skimmer

put the egg on top of the toast , and top up with the sunflower seeds , seasalt and maybe chili flakes .. just saying .. !

Scrambled Eggs with Sesame

whisk 5 eggs , salt and pepper , well

heat a little oil in a skillet and melt 2 tbsp butter on medium heat , add the eggs and stir with a wooden spoon slow until set in beatifully swirls , add toasted sesame seeds and chive , serve with your favourite bread ... and enjoy !
