The most lovely time of the year .. is here , goodbye boots - hello denim jackets ... Spring Equinox is in the air , and the astrological new year starts, plus a major supermoon ....... who lasted 48 hours ...... time to - let go - release that we no longer need .. Begin new , time to clear out what is not working in order to get on track and to see things through fresh eyes , must say it suits me perfect as I told you last time ... !!

I really need this burst of energy , freshness and to follow my passion , no matter where it takes me .... yes I am still and much more on my path to do what I want , because it is my time now , to choose as I wish & believe me I will .... we all should enjoy the journey - because it only happens once and it is our main job to live it !! I also know in my heart , that I am enough , I dont need to be perfect .... I need more emotional intelligence , and someone to toss me some sprinkles of magical fairy dust !!

This Feeling of Spring Freshness , also comes with some changes .. this week for me is all about how to swap this for that :

Cooking News !

When it comes to cooking , it will be for me , a most welcome challenge , to cook out in the country side , at this new place , this spring and coming summer , with a new kitchen , different styles and new creations .. also stunning surroundings , you could think that you are in Provence ... come and visit if you can , they also have a B&B with lovely rooms !

At home I will follow the list I gave you last week , and just compose what I feel like ...

On the plate below , I have simply started with Kale , Spinach and Buffalo Mozzarella sprinkled with my companion Cayenne , after that the fantasy has no limits .......

As on this colourful & healthy lunch plate below ......

The third one , has a Curry & Tomato Cream based Sauce with Cauliflower & Haricot Vertes ..... just add what you like , maybe Chicken .....

Today there will be some :

Roasted Veggies with a piece of Chicken

some Cheese , Strawberries and Dark Chocolate ... maybe a glass of Prosecco or Green Tea.

Tomorrow I am meeting a friend for Lunch ....

The day after that

Most probably

Salmon with buttery mashed Cauliflower or

a Cheese Omelette

I love Peanut Butter ... you might have understood that through the years , every day for breakfast there must be this little piece of dark bread with peanut butter and bitter orange jam .. it gives me energy I believe ... together with the rest of course ....

So here is a tangy , Nutty Sauce , and you can use it together with almost everything !

In a bowl stir together :

1 tbsp tahini

1 tbsp peanut butter

1 tbsp olive oil

1 minced garlic clove

1 tbsp fresh lime juice

1 tbsp rice vinegar

1/4 tsp sriracha

2 tbsp warm water maybe more .. and some sea salt

If bitter to taste , add a little honey , it should be a drizzle-able consistency , ready to enjoy !

Kitchen Stories

I will never forget , working with these guys in the kitchen at a very busy Vegetarian Restaurant ... and the recipes I got from one of them , he was from India so just imagine !

Greek music in Scandinavia ... a concert with George Dalaras , in Denmark the 12th of May , well then I might still be in Greece ......
