Supercharge your self and your life ..

To put real food , as in supercharged food on the table is , to invest in yourself

I call it soul food - superfood or amazing food !

Making food with the ingredients, my grandmother could spell and understand !

In an article about food/diets I did read that the Mediterranean Diet is classed as the best way to eat 2019 , it also said that it could help to keep depression away !!

Get completely charged by nature ... yes .. I cant stop talking , about the return of the light , cant help myself , because it is so beautiful , if you are up early , which I love to be ... with my coffe ... the mornings at the moment ... on a totally clear day .. are spectacular .. the light when the sun comes up ... incredible , talking about to get recharged , charged and totally supercharged !!

Put the apron on ..... lets cook !

Lemon Herb Socca Pizza

The meatless monday dish of your food dreams ... would love to be in Greece , with friends who have wood ovens , when I make this !

1 1/4 garbanzo bean flour

1 1/4 cup cold water

A pinch of sea salt & pepper each

2 tbsp olive oil , plus some more for the pan

Some minced garlic , if you like

Seasoning of your taste , if you want

Mix all this well and let sit 15 - 20 min. in room temperature

You need a 10 to 14 inch pan , to heat in the oven ( the wider the pan , the thinner the crust ) and preheat at max in the oven , 10 min.

Prep your toppings , slice lemons , cheese - tear greens .....

Remove the pan , and coat it with some oil , gently pour in the socca batter , so the pan fills even , turn down the oven to 220c and place pan back for 5-8 min. since it all depends on your oven , check progress after 5 min.

Spread Pesto sauce on top , some slices of cheese , aragula or greens of your choice , thinly sliced lemon no seeds of course .... on top of the cheese , now add some extra thin sliced cheese on top of the lemon , some fresh herbs - basil or oregano plus S & P

Back in the oven again for 10-15 min. until cheese is melted and the bread is crispy & brown on the outside , slide the pizza crust onto a heat safe surface to cool .... maybe some more herbs on top and drizzle little olive oil over your creation before serving .... !!

Petit Pois Pesto

250g Green Peas

1 cup water

2 tbsp veg. stock

2 garlic cloves

25g walnuts

1/4 cup olive oil

1/2 cup grated parmesana cheese

some seasalt & pepper

mix all well and chill for a while .

A nice little spring drink !

La Rose

4 cl Gin Hendricks is nice !

5 cl Litchi juice

2,5 cl Lemon juice

1,5 cl Raspberry Syrup @vin_spritlagret

Asparagus and Brie Puff Pastry from halfbakedharvest.com

You will need

Puff pastry , buy or make, your choice , then asparagus & brie cheese

I like to leave the rind on the cheese , it helps to keep the cheese from melting all over the place , just make small bundles and bake .....

serve with a drizzle of thyme infused honey on top ... and some flakes of sea salt .... delicious ..

yes really , delicious and simple to make , try it out , you will not regret it !!

The power of flowers , London and " flower power " sweet memories ... just have to go to that city , very soon !

But as it turns out , I will go to Stockholm again in the very end of next week , friends coming up from Greece ... oh la la ... nice dining again in the best company ..

I also feel so at home in the latest fashion craze , my hippie soul .. loves ... looking at photos from the fashion weeks ... all of the , big houses , there is so much embroideries , afghan furs , old jeans models , dresses , bijoux - jewelry & the hair styles ... all in the Woodstock spirit - hippie glamour , just my style back then and still !!

Your body is in a never - ending state of burning , stoking , respirating , healing , aging , detoxing , growing & consuming ..... it never stops and many strive towards their bodys perfection .. well just forget that , since the body goes through so many changes .. just in one day it goes from slender good looking , to bloated belly , yes even looking pregnant .... it is perfectly normal if you did eat and drink , salt , water , carbs and some alcohol ... it is called water retention.. and yes stress can also be part of the problem .. keep calm and try to love , that little puffy belly .. it comes and goes ... and sometimes comes back even after a glass of water ... but please remember that a soft and round belly is sexy and feminine ...

As a woman I get provoked by , the beauty industry ... that the norm still is : young & skinny , yes it is changing , slowly though.. there are some older models , even around my age with grey hair , but they are still very slim .... because slim is associated with young........ you should really get a parade , and be the best model for many , if your body has produced a child ... and some small things has changed .......

Try to move , a quick walk or something else , at least 20 min. a day , there are so much to gain from this little daily ritual , they say that 70 year old people who is doing some kind of training on a daily basis , longterm has the body , inside and maybe outside as a 40 year old ... " ygeia proto " as the greeks say .. " health first " !!

Take 10 deep breaths in the morning , and stretch yourself , maybe

switch your attitude , towards more grateful , even grateful that you wake up every day ..

Hydrate your brain ... the first thing in the morning , drink 1 or 2 glasses of water I personally squeeze a lemon in mine every single day .... and smile it makes both you and the people around you feel so much better , be kind , help someone , do hugs its very important , they say it is a power in the act of closely breathing in another persons air so lets do it !!

Marrakech is on my bucket list .. hope I make it , and in the right company ... who loves all the colours and spices they have and small hideaways to explore , a friend of mine did go and she just loved it , said it was amazing !

The music surrounding me today , while writing this post .. has been greek , have had 2 telephone calls today from Greece .. so I slowly did slide into my favourites Pyx Lax , many good songs there .. to bring me into the right mood ..
