Being Real
When I feel the deepest feelings , what do I want to do , me personally want to throw light on it, bring the light of my awareness to it .... it is mindfullness in action .. bring it to the surface and deal with it , survival instincts , healing myself !!
Meditation is also good , since meditation is a cleansing of the mind ...
I think that to be in the kitchen and " giving birth " to a new plate , could be called my state of being , my kind of meditation ....I have the same feeling , when I am in the sea .. just quitley floating and letting everything disappear ... whoa we are going deep in to our minds here .. well .. just breath and let the natural energies work , and please remember , only you know what makes you feel like you ... to feel real !
I am in love with this beauty .... this Beetroot Salad with Horseradish , has taken my breath away , it is so tasty , goes with nearly everything ... I even imagine it together with Greek Xorta , that is steamed or cooked greek greens , preferable picked by yourself ... which I am trying to substitute with baby spinach and other available greens , when I am in Sweden .. but it never tastes the same ... so speaking about that .. I am getting a little itchy, with all the beautiful light returning every day , more and more .. spring is in the air .. this gal is counting the weeks , until she will be back in Greece again ...
For the Salad you will need ,
fresh boiled beetroots cut in pieces
grated horseradish
vinegrette , just a simple one , without extra taste
and just mix it together !

More lovely dishes to make ..
Salmon Rillettes
You will need
120g smoked salmon
200g poached salmon keep cold until its time to use.
2 tbsp unsalted and softened butter and 2 minced scallions mix these and add some lemon zest and lemon juice ,sea salt , black pepper , now stir in the smoked salmon , blend well and mix in the poached salmon , fold in some dill & cilantro , pack into air tight glass jars and refrigerate for at least 6 hours.
Serve with a caper/ honey sauce ..
Caper - honey - butter sauce
melt 1/4 cup of butter ... do not burn ... add 1 tsp capers , 1 tsp honey and little dijon , stir slowly on low heat maybe 1 min. and voila ready to dress up the fish .. spread on toast and bring your friends around, for this little beauty or use it as a starter !
Something more " everydaish " maybe ....
Roasted Cauliflower always a hit ... if you roast it in big flat cuts , you can later coat it with a barbecue sauce and grill like a piece of meat , goes with anything and a long way !
You can also roast it curry rubbed , in smaller bouquettes , together with grapes some linsseed oil and salt & pepper , the taste from the sweet grapes together with the rest is to die for ... serve this fantastic dish with a Harissa Tahini Sauce .. it is a true beauty !
The Sauce.
1/2 cup tahini
3 tbsp lemon juice
1/2 cup water mix this first and add
2 tbsp apple cider vinegar
1 1/2 tbsp harissa
salt to taste

You could fall in love easy these days .... in the returning spring light ... long walk today in the sunshine absolute lovely , there is a special feeling here , up in the northern part of Europe ... we have the dark months and the light months , and very light summer nights ... and this special light who returns this time of the year is ... wow ... of course I do love " l`heure bleue " at Myconos and Aegina in the spring , favoured by so many artists , specially on Aegina , yes beautiful , always my bicycle hour next to the sea .....
Sing , dance , breath , do yoga , eat your greens , cook with loud music in the kitchen , be spontaneous , smile more .. people who smile are the best , follow your instincts & laugh !!
Please bare with me .... yes I am crazy ... but life is fun if you just let it .... there is so much to look forward to ... even if you cant get the love you want ...love yourself ....love the spring , love the upcoming summer ... little me .. have a new inspiring food project to take care of during the summer ...and I hope that I will fall helplessly in love with that .....if nothing else .... because we need to love !!
