Lemons the love of my life ... the scent .. so fresh , I start every day with my glass of lemon water for many years now and feel every single drop on its journey through my body ... nah kidding , but honestly thats how I feel , so refreshed every single morning !!

Meanwhile .. I am on a Halloumi trip ... making a lot of small lovely halloumi dishes ... why ... well because , there where a lot of my friends and colleagues , saying that they did not like halloumi , so me always on the food edge ... am now trying to convince them that it is really quite ok .... the trick is that you have to prepare this cheese very delicate to have the best results !!

A Party Starter !

Fried Halloumi squares on top of a fig , held together with a toothpick and a drop of cranberry sauce .. beautiful designed and a crowd pleaser !!

Halloumi Stroganoff. 4p

Cut 150g of halloumi in small squares and fry them golden in oil , add 2 chopped onions , 3 tbsp of tomato pure , 1 crushed garlic clove , stir a little and add some veggie stock , now add 1 cup of cream , 400g of crushed tomatoes , some dijon mustard & let it slowly boil for a couple of minutes now stir in some thyme plus S & P

serve with rice and a green salad ... time to enjoy !

Or a nice Halloumi Burger with pickled red onion , avocado & coriander .... sounds right or ..

Slice the halloumi cheese and grill nicely ..

put the burger together as you prefer

maybe some chili mayo on the bread then , the chunky avocado saltsa , onions and coriander on top ...

or any other way you like !!

It is the " Happy Imbolc " today , the 1st of February .. we are at the halfway point between , the Winter Solstice and Spring Equinox .. spring energy are coming closer and closer !!

In a way I love this ... it is like to open a gift , a little box .. the not knowing what lays ahead .. budding , more green lush , beautiful things in front of your eyes .... for sure it is worth the waiting , and not to forget , that without the winter months it would probably not be so wonderful !!

Just out of the kitchen where , I made a fantastic winter salad ..

Grilled Pears Grilled Chevre Cheese and Toasted Chickpeas on a green bed and , I made a lemon vinaigrette to go with it , so super nice and fresh .. be my guest .. when life gives you lemons ... !

Have an excellent weekend , celebrate Imbolc , take long , long walks , read books , try new things , cook and eat new dishes on beautiful plates , lots of milky coffe or hot chocolate , light candles , sing , dance & be happy !!

I am in a jazzy mood ..... and , are listening to Coffe Lounge Jazz Band ....
