Good Country !

Sweden is at 3-rd place in the ranking " Good Country " and still climbing ....well .. yes we where at 7-th place , last year , Greece is at place 42, not so much to say about that , if you think of the situation during many years ... what saddens me most is, that it ranks so low on the list for the culture , I have always loved that side about Greece ...I dearly hope they can put in an effort !

Then again we can probably discuss forever what is a good country .. for us who have lived in more than one country, we can of course have different opinions ... when I lived in Greece , the greeks always thought I was crazy ... " how can you live here ... when you are from Sweden " was the most common comment .. and my standard answer always was " every country has good & bad sides , you just choose what suits you best "

Epidavros theatre a place I really love ...

It is snowing outside , very beautiful but also , very very tiring in a way ... since I am not in the northern part of Sweden , where you could amuse yourself with skiing , here it is kind of in the way ... the car has to be digged out ... slippery streets , well I had to go and get myself a pair of Icebugs ... shoes made for this climate and yes you do not slip and fall over with them on your feet .. fancy looking aswell , love them already !!

Weather for nice Coffe Drinks , all kinds of Soups , Stews and Galettes , tons of Citrus and Comfort food !

Another kitchen I would like to wake up in ....

Halloumi Carbonara.

Fix your favourite recipe for Carbonara and switch the meat for small cubes of halloumi , fried in oil with some garlic ... typical comfort food a la me !!

Dough recipe for Pie , sweet or savoury but lovely flaky !

3 1/2 cups all purpose flour

3 tsp sugar

a pinch of salt

300 gr chilled butter

10 tbsp chilled water

combine the dry things and add butter in cubes , now add the water slowly until the dough is moist , wrap in foil and leave in the fridge a couple of hours .

Now if you are ready to make your special , flaky pie ... just fill it with whatever you fancy , I personally bake off the bottom a couple of minutes before filling it up with maybe kale , asparagus and lots of cheese ....and bake at 175c 20 - 30 min.

Something to serve with your Pie !

Herbed Ricotta .

500 g ricotta

1 tsp lemon zest

1 grated garlic clove

1/4 cup of olive oil , mix all this until smooth and add

1 cup finely chopped herbs , maybe parsley , mint , tarragon and chive plus seasalt & black pepper ..... enjoy !

An oldie to finish your meal , this lovely coffe drink will warm me anyway ...

in a tall nice coffe glass

brown sugar , baileys and cointreaux

newly brewed strong coffe

top it with whipped cream ..... now sit back and dream !!

If You feel yourself falling .. get outside , unplug electronics , breathe deeply , connect with water & reach out to friends !

I would like to find this place , on my roadtrips this coming summer , and just fall into this lovely watery place !!

I am on my way for a snowy sunday walk ....before my afternoon cooking , there has been this 10 year challenge ...everywhere ... I am seldom at FB .. except for my page GrammasKitchen , now for a long time , I just use it to get in contact with my friends all over the world ... and I would not post myself there ... yes I know there has been some photos on Instagram ... for fun ..
