Kitchen Stories

Hi lets cook .. because the weather is really grey , grey ..... so better come on in to the kitchen with me, but first you will get a recipe I have promised ... I posted a while back on Instagram " Tournedos Burgers "

here we go .. so put on your apron !

You will need for 4 p.

600 g minced meat from beef

1 egg

1 tbsp dijon

1 tsp thyme

1 minced garlic clove

1/2 dl red wine

1 tsp veal stock

salt & black pepper

Blend meat , egg , spices and wine lightly and make 4 high " burgers "

fry in oil and butter quickly on all sides , transfer to an oven proof dish and leave in the oven to cook 15 - 20 min. 175c

Now the sauce !

Boil together 5 dl cream , and 1 1/2 tbsp veal stock , 1 tsp estragon , 1 tbsp rose pepper , 1 tsp black pepper and 1 tbsp chinese soy sauce , let it boil down , reduce some for a couple of minutes , ready to serve the minced meat tournedos with a good splash of the sauce on top , I personally prefer haricot vertes and grilled tomatoes with this dish , but feel free to add your choice , enjoy !

But if you really feel like ..." I want potatoes with my meat " ... I could recommend this ...

Salt roasted small potatoes with herb oil.

Put 1 kg small delicatess potatoes on a baking tray , drizzle some olive oil and sea salt on top , blend together and bake 30 min. 225c

While the potatoes are in the oven , mix together

4 dl sliced mixed herbes maybe parsley and coriander , 1 minced garlic clove , 1 1/2 dl olive oil & 1 tbsp white wine winegar

when the potatoes are ready baked just drizzle this lovely herb oil on top and start to eat or serve your guests !

Ok , enough now with meat .....I do love it but rarely eat it , am to much of a greenie beany ...

Black Bean Burger

You need

400 g boiled black beans

1 cup almond flour

1 egg

1 grated onion & 1 grated garlic clove

1/2 a cup chopped coriander

1 tsp cayenne

1 tsp salt

1 cup sesame seeds

mix everything except the sesame seeds and make 4 burgers , and turn them in the sesame seeds , they are now ready to grill or fry 2-3 min. on each side ...

Build your burgers in every way you like , maybe with bbq sauce or mayonnaise , greens and bread ... a slice of cheese or two !

Another option is to make a Pasta salad with grilled aubergine .. one of my favourites ..

Slice 350 g aubergine in thin slices , 2 red peppers in bigger slices , brusg both sides with olive oil and grill for 8-10 minutes , blend in a big bowl with 400 g boiled pasta of your choice , 200 g feta cheese and fresh basil ... I prefer just olive or linsseed oil on top

Here is something easy & quick and super healthy ..

Roasted Veggies with Spinach Pesto

Clean and cut 850 g carrots , cabbage , potatoes , beets and onion toss together on a baking tray with olive oil and salt

25 min. 225c

For the pesto

50g fresh spinach

1 grated garlic clove

1 1/2 dl olive oil

2 dl parmesana cheese

1 dl finely chopped pine nuts

salt

mix together the spinach , garlic & oil and slowly add the parmesana and the nuts , if too thick just add some water , this dish is perfect by itself or on a buffet together with other lovely colourful plates filled with healthy dishes !

I have always been obsessed with productivity and action , I pride myself on getting it done , lists , meetings , projects my calender was always full ....I really felt bad if I was not on the move .... but instead of feeling in control , excited & free , I felt stressed out and alone , these years back in Sweden without my own business and working with food for someone else has taught me to slow down in order to speed up !!

So that is my new thing and of course it comes in handy in this stage of life I am in ....slow down , smaller living , say no to crazy busy projects ...knowing that fun is the secret , it is good to loose your mental blocks ...

So say yes to life , be someone elses light , help out , be kind and smile , hug , dance ....

well dear friends thats all for this time , I have not been listening to any music today , had the urge to sit in totally silence ... overwhelming nice to be true !

Run out to the kitchen and start to cook up something , put on your dancing shoes or an apron ,,, cant tell the difference ..
