Recharging !
2 weeks and 2 days after my 2nd hip surgery ... here I am , with my crutches , exercises and healing food & drinks !!
But I feel happy and great , that it is done ...it has been a long journey , since my first feeling that something maybe was wrong ...more exact it was Easter time 1992 at Myconos , while dancing at Astra, there was a sharp pain in the groin on my right side ...and after that it came back from time to time , combined with back pain .. I prefer not to count all the alternative options I have tried for my well being , and all I have done in order to be able to work !!
Anyway , all is really well & good plus it is Friday cheers to that !
So lets concentrate on the nice things .. bounce back , breathe new life , energize and me personally think that food , new recipes is of course the best way , or ?
The last days , have been rather simple in my kitchen ... well you dont cook so much with crutches and all the rest that comes with the post surgery state ...
now I feel much more comfy , so today I will do a dish , that I did try out last summer , as a side dish to the midsummer table , and it comes in handy since I did boil up potatoes yesterday to go with my ovenbaked cod ..
Smashed Potatoes
if you are using left over potatoes , warm them up a bit first
pre heat the oven to 225c
and line a baking sheet with parchment paper and drizzle with olive oil
gentle but firm crush each potatoe on the baking pan
drizzle with olive oil and sprinkle with salt & pepper, bake for 15 min. flip them over and bake for another 15 min.
or until they are crisp
transfer to a serving platter and add more salt & pepper to taste , drop dollops of sour cream on top of the potatoes , sprinkle with scallions and parsley , then again you can choose between a lot of toppings !
This is another lovely and quick dish.
Creamy Vegetarian White Chili
heat 1 tbsp oil in a large pot , add 1 diced onion, 1 diced green bell pepper, 1 jalapeno diced and saute until soft , add 3 minced garlic cloves and 1 tbsp cumin , stir for a while, add 1/4 cup flour toss until the veggies are coated , slowly add in 4 cups vegetable stock while stirring , now add 45-50 ounce drained , cooked white beans, half a cup chopped green chillies , bring to a boil , turn heat down when boiling and let simmer for 15 min. now stir in 2 cups warmed milk and let simmer for another 2 min. remove from heat and season with S & P & lime juice to taste , garnish with avocado, cilantro or whatever you fancy !
Then of course I am being bored out of my head , here , I mean ok how much books and tv - series can you indulge in .... and so of course there is social media .. just saw a programme on the tellie , where there where this professor telling us that , more and more people have a problem , addiction to smarth phones .. or inbox dependence .. and he said that whatever you think , there is no such thing as multi tasking .. you dont get more things done quicker , it seems like it is rather the opposite !
Maybe it is time to break away from the phone more ....the worst thing that can happen is you miss an Instagrammable moment .. you will live !!
For the ones that know me well , you will know my sweet toothe ...normally I am trying to let my sugary things get the better of me , like one time a week ....but how easy is that here now , all alone .....yes it is only one week to Easter .... but I really feel like trying out this ..
Cinnamon Roll in a Mug
this is what we need
9 tbsp flour
3/4 tsp baking powder
a pinch of salt
3-4 tbsp water
3/4 tsp cinnamon
1 1/2 tbsp coconut sugar
first make the frosting
mix 3 tbsp icing sugar with 3/4 tsp plant based milk or water , stir well and set aside,
grease a normal sized cup, mix the flour, baking powder and salt in a small bowl, gradually add the 3-4 tbsp water stirring until it starts to make a dough, kneading it a few times until it is smooth, dust your work space with a little flour and roll it out into a long strip, sprinkle the sugar and cinnamon and fold the edges , roll it up and gently lift to place in the mug, pour over 1/2 tsp water and place in the micro , and microwave uncovered on full power for 45-50 sec. this goes for a 1200 watt micro , if you have a low powered micro , you may need more time , but take it slow or the bun will be tough , check with a tooth pick , turn out on a plate and spoon over the frosting, enjoy immediately !!
Yes I might try it out today or tomorrow ... we do need some fun sugary things in our life ,in between all the fruits and veggies .. for gods sake ..
or a piece of bread with butter !!
