Foodie girl !

Hello again , food is my life , the best though for me is when I can experiment and make my own green recipes ... and frankly it has been like that since the late 70-ies , always some creations of my fantasy, sneaking their way in to the menues , always very well liked by many guests ...

this one I just made and the plate is empty ......silly easy really ....

slice up 4 aubergines and leave them well salted , in a colander maybe 10 min. fry them on middle heat in coconutoil until golden ,add some garlic and greenpepper in the end , meanwhile boil the spaghetti or pasta of your choice and mix it and some green peas, white pepper from the mill , herbsalt and butter , some cheese on top and enjoy !

it just came to my mind that some fried mushrooms would be nice to mix in as well ..

they are so good for you , rich in selenium and B-vitamins , actually one food that boost your immune system , you could also put in some spinach in that pasta dish , another superfood , it has vitamin A , vitamin C , fiber , magnesium and iron , but always try to buy ecological and never overcook , eaten raw is the best , broccoli is another power house , who gives you betacarotene , potassium , magnesium , zinc and iron plus B-1 , B2 , B3 and B-6

so there are many ways to make a simple pasta dish super healthy ....

another really easy little dip is

Mhamara

you will need

2 grilled red peppers

1 cup walnuts

1 garlic clove

a little lemon juice

1 tbsp balsamico

cumin

3 tbsp olive oil

chili as much as you like

S & P

mix until smooth

garnish with some mint leaves or olives !

otherwise I am trying to keep calm ...still waiting for my surgery date .. still working some , with the help of turmeric pills and painkillers , what can a foodie girl do ...

thanks god , I do love myself my daughter & friends , to cook and to eat ... I am trying my best to eat as healthy as possible , and to exercise , so I will be as strong as possible after my surgery.. which is very important in order to walk again without problems ..well it cant be more than a couple of weeks away now ...

my daughter is in Greece ..there is no school these days , due to winter vacation , so she went down to Aigina where she grew up , to see old friends and daddy in Athens of course ...she will be back today late !

another thing I have started , which I havent been doing since the years with Teatercafeet in Visby ... to sprout , in this moment I am sprouting mung beans , just feels so right , they are perfect on a sandwich or in a salad , rich in vitamin E , vitamin C , proteins and fiber !

Speaking of Visby , it has been some trips during the nearly 3 years we are back in Sweden , to Gotland the Swedish island where I lived before Greece , and slowly, slowly I have come to understand that , thats the place for me to live on , with old friends and all the places I love so much and have so many memories , both good and bad ...but still I do love that island ..

so the plan is to move back in a couple of years ......

so beautiful a place to be on , breath in all that loveliness , that to me is both Greece and Sweden in a way .. many times while taking a tour with my motorbike on Aegina in Greece , when my daughter was little ..I truly didnt know on wich island I was ..the landscape , the sea so much alike ..

well my dear friends .. thats all for this time ..have to prepare my lunchbox for tomorrow big smile ....!
