Colourful fall !
Lovely autumn days , all this colours , made for long walks or in my case , touring on my bike ... back in Sweden with my darling daughter , after 10 days in Greece , nice to visit my old island and all the people I know there , in the company of an old friend ....faboulous days , but now it is time for new things .. just left my daughter at the train station she is on her way to Stockholm and restaurant Volt with a Michelin star on top of their menu .....where she will be doing kitchen practise for a month .. lucky her !
I just feel very strongly for healthy eating , gym , yoga and decluttering ....packing away a lot of clothes which I never wear ...so thats on my what to do list these days when I am alone here and before work starts next week ... " back to life , back to reality "
there is more and more talk about how important our lifestyle is ... in some cases to get or not to get cancer can be tracked down to what you eat , if you exercise , the use of tobacco , drinking , infections or stress ....
meditation is a great way to calm down , and the easiest way to do it is simple breathing .. sit and close your eyes and breath in slowly , concentrate on your breathing and keep it for a while , then breath out slowly , do this 5 times , so good for you , it even gets your intestines a nice massage ..
this time of the year it is very easy to get all kinds of infections or colds , one easy and old tip is honey and water mixture , though it has to be Manuka honey , it is well known to have exceptional bacterial - fighting properties , me personally at the first signs of a cold , throw together , a ginger, lemon and honey shot .....!!
half a tsp of ginger
1 tsp lemon juice
half a tsp honey
some hot water
mix together and drink up quickly !!
something alltogether different ....
imagine to have a private chef for a couple of days , to help you do the right food choices , in order to eat right and loose weight ..something to think about ..all the shopping lists done , allready with healthy and tasty recipes quickly done .... a dream maybe ..lets see ..!!
until then there are these lovely meditarrean quinoa bowls ...
Quinoa bowls with roasted red pepper sauce
Red pepper Sauce
pulse together
2 roasted red peppers
1 clove garlic
half a tsp salt
juice of 1 lemon
half cup olive oil
half cup almonds
you will need for your bwls
cooked quinoa
spinach , kale or cucumber
feta cheese
kalamata olives
jalapeno
thinly sliced red onion
hummus
fresh basil or parsley
olive oil , lemon juice , salt and pepper
you build your own bowl , and of course if you prefer avocado or beans , just make a change , and the healthiest is to build up on a lot of greens in the bottom ...
this is a nice way to get some friends together for a small bite , good luck !
maybe a soup ..
Creamy Carrot Soup
Saute`together in a pan with oil
1 kilo sliced carrots
1 chopped onion
4 minced garlic cloves
half a tsp cumin
some coriander
some red pepper flakes
about 15 minutes
add 4 cups vegetable broth
let simmer 30 minutes stirring occasionally
puree soup the way you prefer
serve with a dollop of greek yogurt mixed with herbs
enjoy !

I have lived and worked on both of them , they are big , big loves in my life ....and we have another Greek island where my daughter grow up and we had our restaurant Gramma , Aegina also loved in our hearts ....
