Health on a plate !
We are in the middle of the summer , and I am back on the mainland in Nyköping with all the intensions to do what you are doing in the summertime , lovely swedish summer .. all is lush and green , beautiful , I am working quite a lot until the middle of August , and I really love to be able to take the bicykle to work , which was a no no before my hip surgery , oh the feeling to just roll on ...and breathe , such joy !!
you will get some really nice recipes this time
starting with a filling Avocado Spinach Smoothie
400 ml water
400 ml coconut water
large handful of spinach
half of a ripe avocado
half cup of chopped zucchini
1 tsp of cinnamon
half a tsp of ground ginger
blend all together in a mixer
this wonder smoothie are antioxidant aswell as antiinflammatory, lowers your bloodsugar so to your health ....bottoms up !
Turmeric Chicken Quinoa
heat oil in a fry pan , add 1 diced onion, 2 cloves of chopped garlic and cook until soft, add 500 gm chicken mince and stir until it is broken up and cook 5 min. add 1 tsp turmeric to coat the chicken , now add 2 cups cooked quinoa, a large handful of green beans, half small red cabbage cut into chunks, 2 diced carrots, cook for 5 min. add salt and pepper of taste.
when you cook the quinoa it is really important that you cook it in stock , of your choice , to get the nice taste of the dish

there is no summer without Pesto
Pumpkin Seed Parsley Lemon Pesto
1 cup parsley
1 cup Spinach
1 cup coriander
4 cloves garlic
1 cup pumpkin seeds
half cup cold pressed olive oil
70 gm parmesan cheese
30 gm lemon juice
sea salt and black pepper to taste
blend it all in a mixer
but I must confess, that a plain greek yoghurt served with fruit , berries and honey drizzled on the top is no 1 on my summer food list .....
another thing who is something to enjoy ... is grilled chunks of water melon tossed into a nice salad ..!

Ruby Red Beet Salad
4 cups beets in chunks
1 cup pomegranate seeds
half cup chopped walnuts , best toasted
half cup dried cranberries
raspberry vinaigrette
