Happy Buns and Bunny Time


Yes we are approaching Easter up here in Scandinavia ,.. it will be my third Easter , not being in Greece , I would be lying if I said I dont miss it ,. all the Greek Easter preparations , both at home and at church , are wonderful and interesting , at the restaurant we where busy with all the cooking , specially the Easter soup Mageritsa , who is being served after midnight at Easter Saturday , so happy to have been a part of all that so many years , but the Greek Easter this year is a month away ,I had plans to go to Myconos and visit a friend , but my hipreplacement surgery will be in the way ,.....next year maybe !!

Up here in Scandinavia Easter is yellow , in Greece Easter is red ,....

Give us this day our daily bread ... There is a lot of discussions about bread and flours ,. these days , actually more and more , which is really good .. but it is also important to recognize what is what ...well we all know by now that wheat is the ... perfect chronic poison ,...so now everyone is eating Gluten Free or Whole Grain bread ... and that may not be so easy either , whole grains spike your blood sugar , and that triggers a cascade of inflammation and increases your risk of getting cancer , Alzheimers , heart disease ,.....and the ingredients in most gluten free products ,..will also send your blood sugar soaring , like Rice flour, Corn starch,Potato starch,Tapioca starch,Sorghum flour and Millet ...they are not healthy replacements for wheat ,...some people does also gain weight , when on a gluten free diet ...so high glycemic index , so take care to choose bread with intelligent ingredients !!!

Here is a recipe for a low carb zucchini crust vegetarian pizza, gluten free !

Crust ingredients

4 cups grated then chopped zucchini, take care to wring out all the water !!

half a cup grated mozzarella cheese

1 cup almond meal

half tsp garlicpowder

1 and a half tsp oregano

some basil and salt

2 large eggs

half a cup shredded cheddar cheese

half a cup shredded parmesan cheese

mix all in a large bowl

grease a sheet of parchmentpaper , and your hands as well , because the dough is rather sticky , shape the dough on the sheet as you wish ..

and ,..

bake for about 10 min. until the crust looks set, and the bottom starts to brown , carefully move it from the oven, and top with sauce and toppings of your taste,..

bake another 3-5 min. until the cheese is bubbly !!

these types of crust , are beautiful to work with , and not to mention the feeling you get from eating it ,...imagine a slice of healthy pizza , with the topping you desire ...yummie !!!

And since its Easter time , we do need some small sweet things , to pop into ourselfes ,..or to give away as a gift ,...I did choose something with pistachios , since I have lived on the pistachio island Aigina , it came rather naturally to my mind ..

Pistachio Sesame seed balls , also gluten free !

just throw pistachios , sesame seeds , dates and coconutoil in a food processor ,..and roll into small or big balls , did you know that pistachios contain 90% healthy unsaturated fat ,..well yes they are quite good in many ways ,..

and so are dark brewed coffe, red wine , dark chocolate and green tea ,... its time to go and enjoy all the nice looking and wonderful smelling things , that are served this Easter ,...Happy Easter to all of us who are celebrating it now this weekend , and dont forget to laugh , dance and smile ..
