Green recipes if You like !

Well hello ,I am sorry that it took so long , to get my fingers on the computer , and to write a post before Christmas ,.. but I have been so busy , with the big and lovely Christmas Buffet at Blommenhof ...and a million other things ,.. then to send my daughter on her way to Greece, so now finally I have a moment over ..

this is where she is now ,.. and me too , soon for New Years Eve !! Sadly the upcoming Christmas season will not be so funny and good as in the commercials,.. for a lot of the greek people , but bless them all !!

So I have some nice and easy green recipes for you ,.

first out is a nice little Vegetable Terrine

you will need

2 dried tomatoes

20 gr of pitted olives

50 gr of raw unsalted almonds

100 gr of red peppers

50 ml olive oil

a pinch of paprika powder , or cayenne

put everything in a blender and grind to a paste , and it is ready for a nice little jar to be filled, it keeps for 3-4 days in the fridge.

Ginger and Turmeric aromatic Rice

pour 1 cup brown basmati rice in a bowl and soak with water, for 15 min.

while rice is soaking, put on a kettle with water and bring to full boil, add 1 tbsp coconutoil 2 large minced garlic cloves, 1 tbsp grated ginger , 1 tsp turmeric to a pan and heat to medium , saute about 3 min. add the rice and some salt , saute another 2-3 min. add 2 cups of boiling water and reduce heat , let simmer under cover for about 30-35 min. when nearly ready add 1 tbsp lemon juice and half a cup dried cranberries , serve with fresh cilantro and pine nuts , just lovely !

Cauliflower boiled in cream and saffron !

Saute 1 sliced onion and 0,5 gr saffron in butter , like 3-4 min. then pour in half a cup white wine , half a cup cream, half a cup water and some salt ,bring to a boil and add half a kilo cauliflower in small boquettes and let steam with a lid for about 5 min. serve with fresh thyme on top , serves 4 p.

last out is ,..

Pizza with potatoes, gryere cheese and rosemary !

for the dough

25g yeast

2,5 dl water 37c

1 tsp sugar

2 tbsp olive oil

6 dl flour

blend all, nearly all the flour , and work it about 10 min. in a machine 5 min.

cover and let rise 40 min.

makes 4 small , put on baking trays covered with grease paper.

decorate with very thin cut potatoe , shredded gryere or parmesan cheese , fresh chopped rosemary , black pepper and seasalt , drizzle some oliveoil over and bake for 15 min. 225c

and there is always a nice salad to make , like apple, kale and red cabbage made with an orange vinaigrette served with toasted walnuts on top,. !!

its a good, good thing to try to make a little healthier table, around Christmas , because there are a lot of tempting goodies around , so try to balance the food !!!

and try to go slow on the sugar , because its hiding everywhere , so you dont need extra ...

we are also in the middle of Flu season , and there is still time to build up a strong, healthy immune system , these foods is a good help on the way , eggs , butter , liver , carrots , kale , citrus , berries , red pepper , spinach , peanutbutter , avocado , almonds , wheat germ , mushrooms , oily fish , yogurt , fermented foods , root vegetables , oysters , lentils , molasses , raisins , brown rice , salmon !!!

so have your pick little by little on your plate every day ,...such a treat, so healthy , makes you strong and full of life !!!!!
