BACK ON TRACK !
Back from Greece , have been visiting friends at my beloved island of Myconos and in Athens , nearly 3 weeks of laughter and totally madness in the company of old friends , plus a good look at some new interesting foodplaces in Athens ,...
but now my body and brain is back in Sweden and our new hometown Nyköping ,time to unpack those last boxes and to get ready for some work in a new kitchen , its probably good for me to have to think and to learn where to find all small kitchen things , after all I could work in my sleep at our restaurant in Greece all those years , but now as a little paid cook ,...things has to be done a whole lot differently , and I just love it !!!
summertime is over ... we moved our clocks back 1 hour this morning ,. and all of a sudden its a lot of talk about autumn depression , and how to tackle things like that ,..I dont know if I am blessed or what ,. but I can not remember ever been thinking about how depressing grey skies , rain and other related issues is , must have been to busy on Gotland , before my departure ,.. and now 23 years later again , running around, but I do believe that YOU ARE WHAT YOU EAT ,...I am eating mostly green , but I have tried to put in some salmon at least 1 time a week , but of course to destroy my happy fish eating mood , there is now a lot of articles about cultivated salmon mostly from Norway, and of course other fish , so I am now told that cultivated fish is the most dangerous thing to eat ,...because of what they feed the fish now , it is less of the good fats and more of the bad guys,.. chemicals and antibiotics,. so tell me what to do , because 99 percent of what is sold on the market is cultivated ....and to be honest where do you find wild fish from coldwater seas ,..things like this can make me totally crazy , not the weather...
so it has to be as always , you have to choose what feels right for you , and try to put in as much " good food " as possible , to clean out the body , because too much toxic stuff can relate to bad breath, acne, depression or even cancer, so try to put in some of these, ..spinach, parsley ,ruccola, turmeric, ginger, oregano, garlic, dandelion, psylliumhusk they are wellknown for their ability to clean out the system, so we are back to my favourite " EAT LIKE A GREEK " which is not only about food its a lot about a new lifestyle , its about to enjoy the food in good company , and to take leisurely walks or to ride the bike , to be outdoors get some air see some people , this can reduce stress , simple changes can make a dramatic change to our health and vitality in a short space of time , try to choose organic, grass fed whenever possible, ok.. back to the fishes again , canned or fresh .... well it turns out that canned fish is more likely to be wild than farmed , and canned fish as sardines is higher in calcium ,... so folks make your own choice , well they never said it would be easy or a dance on roses !!!
maybe some of you would like to try an ayervedic detox food .. Kitchari
you will need for 3 - 4 servings
1 cup soaked Quinoa
1 cup soaked split Mung beans
1 tsp coconut oil or olive oil
1 tsp cumin and mustard seeds
1 tsp fennel powder
1 and a half tsp coriander powder
half tsp turmeric
half tsp asafoetida powder
1-2 tsp chilli powder , optional
2-3 tbsp chopped cilantro
1 tsp freshly squeezed lime juice
salt to taste
approx. 2-4 cups of water
add the oil in the cooker pan and saute the mustard and cumin seeds , later on add the quinoa and beans mixing it slowly with the spice powders , add water to cover the pot and pressure cook for 4-5 whistles , it should be thick and mushy .
If not using a pressure cooker , the quinoa and mungbeans have to be cooked separately.
Raw topping sauce
1 cup of veggies , maybe avocado, peppers, onion, cucumber, zucchini and cherry tomatoes
1-2 tsp coconut oil
1-2 tsp curry powder
1-2 tsp maple suryp
salt to taste
1 tsp lime or lemon juice
water as needed to make the sauce
mix everything and keep marinated for 30 min.
