Gotland again !
Sunny Saturday here in Sörmland , getting ready to go to an exhibition in Stjärnhov where George Badawi is one of the 36 artists , he is also the husband of a friend from my years in Athens , I am also getting ready to go back to Gotland , an old friend Lena did call me after X-mas , to ask me if I would be interested to take care of their new salads buffet at Krusmyntagården this summer ,.. she knows my passion for the green , raw , healthy eating and if you read the early posts on the blog , you will see when I started to serve salads on Gotland,...yes in the late 70-ies ....!!!!
So I am very excited to go , am also looking forward to see a lot of my old friends on the island ,..
we are also in the middle of changing location here on the mainland of Sweden , Sparreholm is truly beautiful , lush and green .....but for my 17 year young daughter it is maybe not the center of the universe , so we want to go somewhere where there are more movements in the streets ,...so to say ,.. so good luck to us , well it is on the programme , and between all this I have been doing some cooking in the schools , but now I am packing my working clothes and recipes ,..leaving on Monday morning for a week at Krusmynta to get into the feeling of my new work space !!!

I made a lovely , healthy salad for myself yesterday when I came home after a day in the kitchen at Prins Wilhelm school in Flen , it is so quickly done ,..well if you have your fridge organized ,...this we have been talking about before .....
GREEN FRIDAY BLUES SALAD
in a bowl toss together
finely sliced iceberg salad
sliced cucumber
some cherry tomatoes
which I combined with a low fat dressing , greek yoghurt , white vinegar , dijon, estragon, salt and black pepper
topped it off with sliced avocado , toasted sunflower seeds and peanuts !!!
With this I served myself a BIG Coffe Latte ... divine !!
