Spring Cooking
We have sunny , thrilling days , up here in Sweden , spring is in the air , its getting green and small lovely , fresh flowers is popping up all around us ,....getting into summer cooking mood , so of course 2 rather easy spring recipes came to my mind !
First out
TZATZIKI on every greek table
You need
1 grated cucumber
500g greek yoghurt
3-4 crushed garlic cloves
a pinch of salt
lemon juice or vinegar
mix all add little olive oil and put into the fridge to cool
Something that goes well with tzatziki is all kind of fritters , ..
Tomatoe Fritters
half a kilo grated tomatoes
1 red onion grated
2 tsp tomatoepaste
3 tbsp fresh mint finely chopped
salt and pepper
150g self raising flour
1 egg
some chopped parsley
oil for frying
fry the onion in some oil until golden add the chopped tomatoes and stir , transfer to a big bowl and add herbs , salt , pepper and tomatoe paste , now add the egg and the flour , mix until a thick batter , if necessary add more flour , heat up oil in a pan and fry small buns on both sides until golden and crisp , leave them for some seconds to drain on paper towels ,...serve immediately , together with the tzatziki
and some olives on the table !!!
Just cook and eat like a greek , more and more health sites are talking about the longevity way of life still performed by greeks , not used to eat white sauces and big steaks , and they are walking and walking every day , then in the evening a little wine is so good for you , Jammas !!
