Kitchen Detox
Its the holy week in Greece , last days before the big Easter celebration , but since me and my daughter are living in Sweden now , we had Easter last week , and we went to Gotland the Swedish island I fell in love in when I was young , and I came to live there for 13 years all year around , and opened the first Salad place in Visby ,.. in the late 70ies !! And I will be in charge of a healthy , raw and colourful salad buffet , at Krusmyntagården this coming summer , closing the circle ,... so I am living with heaps of recipes , cooking books and all of my saved helthy ideeas around me ,....
and theres where my mind came to think about ,.. again , how important it is to declutter and organize the kitchen , in order to get the best and easiest way out of your eating and cooking ,...start with to throw out all things in your pantry with labels you dont understand and keep only to things you recognize , to get on the fast track to wellnes , and bevare of health claims on the packages , like , no trans fats or reduced sugar , well they dont really say anything ,...also start to prepack healthy snacks , boiled eggs , hummus , smoothie packs also pack dishes to freeze , they will come in handy on busy days ,....!
And now to my Greek recipe !
Fasolakia or vegetarian bean stew.
Boil 500g peeled and diced potatoe 5 min , drain and set aside
dice 1 onion and 4 garlic cloves and cut 500g of green beans in smaller pieces
fry the beans in some oil together with half the onion and 2 garlic cloves, transfer to a bowl , fry the potatoes with the remaining onion and garlic 2-3 min , add 450g diced tomatoes, half a cup of water , some stock , salt , bayleafes, parsley and the beans and boil on low heat for 9-10 min serve with fetacheese and bread.
