Eat Like A Greek
Lets do some spring cooking and get some new inspiration - clean out your pantry and fridge , number one in the healthy living chain is to get organised , yes organise your food , if you have the right products at home , peeled carrots in a jar with water, jars with cleaned veggies and fruits , nuts and seeds, sprouts , legumes and leafy greens , maybe some boiled eggs ,. it is the easiest thing in the world to make a lunch platter or a nice side dish, and the mediterranean diet has all this things in it !
Lets cook like a greek , today I am making a main dish
Vegetarian Yiouvetsi
Saute 2 chopped red onions in
some oil till soft, add some cinnamon and stir , set aside , meanwhile boil 500g risoni or greek kritharaki for 5 min until al dente,
transfer the risoni and cooking liquid , 4 diced and fried carrots, 800g diced fresh tomatoes, 750g diced zucchini, 2 garlic cloves sliced , bay leaves , oregano, salt and pepper,
bake for an hour at 180c or until nearly all the liquid has been absorbed
serve with grated cheese on top
Fresh lemons is nearly always on the table or the counter in a greek kitchen , they are so good for you in a million different ways , squeeze them on your food or put some slices in a fresh glass of water,
another thing often present in a greek home , is fruit , they carry home a lot of fruit every week , and a nice way to serve an apple , which we often did at our restaurant on Aegina, is just slice it up and sprinkle some cinnamon and sugar on top !
and be physically active and enjoy meals with others , be happy that the spring is here
