Eat Like a Greek !
Have been in Athens recently, together with my daughter and while I still have all the smells and sights in my head ,.. of all the nice tables we visited , one old recipe came to my mind , which I used to cook a lot when we where living in Athens , and Irida was little , just because it came in so handy ,..prepare, put into the oven and cook , while you are busy outside or inside ,...
Makaronaki Cofto Sto Fourno or Baked Macaroni
700g diced fresh tomatoes
115g butter
4 chopped celery sticks
sea salt and freshly ground black pepper
455g wholemeal short cut macaroni
grated cheese to garnish
Place the tomatoes in an ovenproof dish, add the butter , or oil if you prefere, celery, salt and pepper, add 425 ml warm water and stir, place in a hot oven 180c and bake for 20 min. remove from the oven and add the macaroni, stirring with a fork to make sure that it doesnt stick together. return to oven , it should be ready when the water has evaporated, if the macaroni is not soft add some more water and cook for a little longer, serve with a generous amount of cheese , parmesan or your choice .
